Business BEAT: Architect’s Timeless vision realized in restaurant

Customers at MHK Architecture and Planning ask if his designs are Mediterranean or modern and Matthew Kragh responds, “We don’t design in a genre, but with every design we do we strive for it to be timeless.” Timeless is the design concept he brought to the new Old Naples eatery that opened in August — Timeless, An MHK Eatery — for the neighborhood to experience for the next 50 years or more.

As an architect and community advocate with an interest in cooking and culinary shows, Kragh had a vision of the perfect eatery. “As architects, we take our customer’s vision and help turn it into reality. I saw my own (vision) come to fruition,” he said. Timeless is reminiscent of an elegant coastal cottage with an open kitchen as a focal point.

More than 450 homes in Old Naples include MHK Architecture and Planning’s timeless designs.

An Old Naples neighborhood eatery to which he would take his clients and they would take their friends was Kragh’s original idea, more on the order of pizza and beer until he met David Nelson, Timeless’ executive chef. “I knew right away that his talent would take us further,” Kragh said. “My name and reputation were on the door, but I told him, ‘Tell me what you need and we’ll get it.’”

“We have a perfect partnership,” said Kragh. “I bring clients, enjoy eating everything on the menu and leave the rest to him.”

Nelson was engaged in selecting all the kitchen equipment including a Wood Stone coal-fired oven. “It was my dreams come true,” he said. With two decades of culinary experience in his native Minneapolis and since 2006 in Naples, Nelson still traveled the nation before the opening to visit the best independent pizzerias. “We take pizza to a new level,” he said.

Timeless is a restaurant and open kitchen, a full bar and pizza lounge and espresso coffee bar – a complete New Year’s Eve venue to enjoy a three-course prix fixe menu with Champagne and for the Super Bowl party Feb. 4 in the inside/outside lounge.

Kragh praised his grouper sandwich with a fried green tomato, served for lunch, and his dinner steak. “The steaks are perfect temperature and tenderness inside while crunchy on the outside from the coal-fired oven’s high heat,” he said. Timeless recently added a Bloody Mary bar to its brunch menu.

Fresh bakery items are purchased from La Colmar Bakery – on the other side of the invisible wall between the two businesses – a reflection of Timeless’ collaborative, neighborhood spirit.
